✨ Crispy Zucchini Fritters

Ingredients

  • 2 medium zucchinis

  • ¼ cup all-purpose flour

  • ¼ cup grated Parmesan

  • 1 egg

  • 1 small garlic clove, minced (optional)

  • ¼ tsp black pepper

  • ¼ tsp salt (add more if needed)

  • 2–3 tbsp oil for frying


‍ Instructions

1. Prep the Zucchini

Grate the zucchinis and place them in a bowl.
Sprinkle with a pinch of salt and let sit for 5 minutes.
Squeeze out as much liquid as possible using your hands or a clean towel.

2. Mix the Batter

In a mixing bowl, combine:
✔ squeezed grated zucchini
✔ flour
✔ Parmesan
✔ egg
✔ garlic (optional)
✔ pepper & a little salt

Mix until combined. The batter should be thick — not watery.

3. Fry the Fritters

Heat 2–3 tbsp oil in a pan over medium heat.
Scoop a spoonful of batter and flatten slightly in the pan.
Fry 2–3 minutes per side until golden and crispy.

4. Serve

Place on a paper towel to absorb excess oil.
Serve warm with:

  • Sour cream

  • Garlic yogurt dip

  • Ranch

  • Marinara
