  • 1 block (8 oz) feta cheese, cut into cubes
  • 3 large tomatoes, sliced
  • 1 small red onion, sliced into thin rings
  • ½ cup green or Kalamata olives
  • ¼ cup fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt (optional — use sparingly)

🥗 Instructions

1. Prep the Ingredients

  • Slice tomatoes into rounds.
  • Cut feta into evenly sized cubes.
  • Slice the red onion thinly.
  • Pat the olives dry if they’re packed in brine so the salad doesn’t get watery.

2. Build the Salad Tower

On a serving plate:

  1. Start with a slice of tomato.
  2. Add a ring or two of red onion.
  3. Add a cube of feta.
  4. Sprinkle a few olives around the base.
