Ingredients (Serves 4–6)
- 1 cup cottage cheese (low-fat or fat-free)
- 1 cup rolled oats
- 1–2 eggs, lightly beaten
- ½ cup milk (dairy or plant-based)
- 1–2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp cinnamon (optional)
- Pinch of salt
- 1 cup fresh or frozen blueberries
Directions
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
- Mix wet ingredients: In a large bowl, combine cottage cheese, eggs, milk, honey, and vanilla. Stir until smooth.
- Add dry ingredients: Mix in oats, baking powder, cinnamon, and salt. Stir until fully combined.
- Fold in blueberries: Gently fold blueberries into the batter.
- Bake: Pour mixture into prepared dish and bake for 35–40 minutes, or until set and lightly golden on top.
- Cool slightly: Let it cool for 5–10 minutes before slicing. Serve warm.
