Breakfast Sandwich
Ingredients
• 1 loaf of sliced bread (edges trimmed)
• 1 small tin sardines or 1 can tuna (in oil or brine)
• 2–3 boiled eggs (chopped)
• 1 medium carrot (grated)
• ½ small cabbage (finely shredded)
• 1 small tomato (diced)
• 2 tbsp mayonnaise
• 2 tbsp salad cream (optional)
• 1 tbsp butter or margarine
• Pinch of salt and black pepper
• Optional: small handful of parsley or spring onions (chopped)
Instructions
In a bowl, mash the sardines or tuna with a fork until smooth. Add a little mayonnaise or salad cream to make it creamy. Set aside.
In another bowl, combine grated carrot, cabbage, diced tomato, chopped boiled eggs, and parsley. Add mayonnaise, salad cream, salt, and pepper. Mix until creamy but not watery.
Trim the edges of your bread slices.
Spread butter lightly on one side of each slice.
On the first slice, spread the sardine/tuna mixture evenly.
Place another slice of bread on top and spread the creamy coleslaw mixture over it.
Cover with a third slice of bread to make a triple-layer sandwich.
Press gently, then cut diagonally into triangles.
Repeat the process with the remaining bread and filling.
