Prep Time: 10 minutes
Bake Time: 25–30 minutes
Servings: 6–8
Ingredients
-
1 cup Greek yogurt (thick, full-fat or low-fat)
-
2 large eggs
-
¼ cup black cocoa powder (or regular cocoa)
-
3 tbsp chia seeds
-
¼ cup maple syrup (more for sweeter cake)
-
1 tsp vanilla
-
½ tsp baking powder
-
Pinch of salt
Instructions
1. Prep the Chia Trick (The Secret to Fudgy Texture!)
Mix chia seeds with 3 tbsp water and let them bloom for 5 minutes.
This creates a gel that makes the cake moist and fudgy — no flour needed.
2. Make the Batter
In a bowl, whisk together:
✔ Greek yogurt
✔ eggs
✔ maple syrup
✔ vanilla
✔ the chia gel
Add cocoa powder, baking powder, and salt.
Mix until smooth and chocolatey.
3. Bake
Pour into a small loaf pan or 6-inch round pan lined with parchment.
Bake at 350°F (175°C) for 25–30 minutes.
Center should be set but slightly soft — like a healthy brownie.
4. Cool & Serve
Let cool 10 minutes before slicing.
Serve with:
-
fresh berries
-
a drizzle of maple syrup
-
yogurt or whipped cream
-
shaved dark chocolate
