Oatmeal Raisin Cookies
Ingredients
• 1 cup (226g) unsalted butter, softened
• ¾ cup (150g) brown sugar
• ½ cup (100g) granulated sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 1½ cups (190g) all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• ½ teaspoon salt
• 3 cups (270g) old-fashioned rolled oats
• 1 cup (140g) raisins
Instructions
Cream the butter, brown sugar, and granulated sugar together until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In a separate bowl, mix the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the butter mixture and mix until just combined. Stir in the oats and raisins until evenly distributed.
Scoop spoonfuls of dough onto a parchment-lined baking tray, leaving space between each cookie. Slightly flatten the tops with your fingers or the back of a spoon.
Bake in a preheated oven at 175°C (350°F) for 10–12 minutes, or until golden around the edges but still soft in the center. Let them cool on the tray for a few minutes before transferring to a wire rack.
These cookies are chewy, buttery, and filled with warm cinnamon flavor — a timeless classic for tea time or gifting.
