Crustless Asparagus Quiche with Spinach, Mushrooms & Sausage
Ingredients:

1 cup cooked sausage (crumbled)

1 cup fresh spinach (chopped)

1 cup mushrooms (sliced)

1 cup asparagus (cut into 1-inch pieces)

1 cup shredded cheese (cheddar, mozzarella, or Swiss)

6 large eggs
-
1 cup milk or half-and-half
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp dried oregano
-
Salt & pepper to taste

1 tbsp olive oil (for sautéing)
Instructions:

Preheat Oven
Preheat your oven to 375°F (190°C). Grease a pie dish or baking dish. -
Cook the Sausage
In a skillet, cook sausage until browned. Remove and set aside. -
Sauté Veggies
In the same pan, heat olive oil. Add mushrooms, asparagus, and spinach. Cook for 3–4 minutes until softened. Season lightly with salt & pepper. -
Combine in Baking Dish
Spread the sausage evenly in the bottom of the greased dish. Add the sautéed veggies on top. Sprinkle the cheese over everything. -
Mix Egg Filling
In a large bowl, whisk eggs, milk, garlic powder, onion powder, oregano, salt & pepper. -
Pour & Bake
Pour the egg mixture over the sausage and vegetables.
Bake for 30–35 minutes or until the center is set and top is lightly golden. -
Cool & Serve
Let sit for 5 minutes, slice, and enjoy warm!
