Pecan Bread
Ingredients
For the Bread:
2 cups all-purpose flour
1 cup granulated sugar
½ cup brown sugar (packed)
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon (optional but recommended)
2 large eggs
1 cup buttermilk (or regular milk + 1 tbsp vinegar/lemon juice)
½ cup melted butter (or neutral oil)
1½ teaspoons vanilla extract
1 cup chopped pecans (toasted for extra flavor)
For the Topping (Optional but AMAZING):
2 tablespoons melted butter
¼ cup chopped pecans
1 tablespoon brown sugar
Instructions
1. Preheat the Oven
Preheat to 350°F (175°C).
Grease a 9×5 inch loaf pan or line with parchment paper.
2. Prepare the Dry Ingredients
In a large bowl, whisk together:
Flour
Granulated sugar
Brown sugar
Baking soda
Baking powder
Salt
Cinnamon
Make sure everything is well combined.
3. Prepare the Wet Ingredients
In another bowl, whisk:
Eggs
Buttermilk
Melted butter
Vanilla extract
4. Combine the Batter
Pour the wet ingredients into the dry ingredients.
Mix gently until just combined—don’t overmix.
Fold in chopped pecans.
5. Add the Topping (Optional)
Mix the topping ingredients and sprinkle evenly over the batter.
6. Bake
Pour batter into the prepared loaf pan.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
If the top browns too quickly, cover loosely with foil for the last 15 minutes.
7. Cool
Let the bread cool in the pan for 10 minutes.
Remove and cool completely on a wire rack.
