Famous La Scala Chopped Salad
This signature chopped salad features finely diced greens, flavourful meats, creamy mozzarella, and a zesty vinaigrette for the perfect bite every time.
Ingredients
For the Salad
4 cups romaine lettuce, finely chopped
1 cup iceberg lettuce, finely chopped
1/2 cup salami, finely sliced into strips
1/2 cup mozzarella, diced or shredded
1/2 cup garbanzo beans (chickpeas), rinsed and drained
1/4 cup red onion, finely diced
Optional: 1/4 cup cherry tomatoes, halved
For the Dressing
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 small clove garlic, minced
1/4 teaspoon dried oregano
Salt and pepper to taste
Optional Garnishes
Grated Parmesan cheese
Fresh parsley or basil, chopped
Directions
1. Prepare the Dressing
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well combined. Set aside.
2. Assemble the Salad
In a large mixing bowl, combine romaine lettuce, iceberg lettuce, salami strips, mozzarella, garbanzo beans, and red onion (and cherry tomatoes if using).
3. Toss with Dressing
Drizzle the dressing over the salad and toss gently until all the ingredients are evenly coated.
4. Garnish and Serve
Transfer the salad to a serving bowl or plate. Garnish with grated Parmesan cheese and fresh parsley or basil for added flavour. Serve immediately.
