Ingredients (Serves 2)
4 large eggs
1 cup cottage cheese (preferably full-fat for creaminess)
2 tbsp milk or cream
1 small onion, finely chopped
1 small bell pepper, diced (optional)
1-2 cloves garlic, minced
2 tbsp fresh herbs (parsley, chives, or dill), chopped
Salt and pepper, to taste
1/2 tsp paprika or smoked paprika (optional)
1/4 cup grated cheese (optional, for topping)
Butter or cooking spray (for greasing)
Instructions
Preheat Oven:
Preheat your oven to 180°C (350°F). Grease a small baking dish or individual ramekins with butter or cooking spray.
Prepare the Egg Mixture:
In a medium bowl, whisk together eggs and milk/cream until smooth.
Stir in cottage cheese, chopped onions, bell peppers, garlic, and herbs.
Season with salt, pepper, and paprika.
Pour and Bake:
Pour the mixture into the greased baking dish or divide into ramekins.
Sprinkle the top with grated cheese if using.
Bake:
Bake for 20–25 minutes (or 15–20 minutes for ramekins) until the eggs are set and the top is lightly golden.
To test, insert a knife in the center; it should come out clean.
Serve:
Let it cool slightly for 2-3 minutes before serving.
Garnish with extra fresh herbs or a pinch of paprika if desired.
