Preheat the oven to 300°F (150°C). Line a large baking sheet with parchment paper.

Mix the seasoning: In a small bowl, stir together Old Bay, garlic powder, onion powder, paprika, and lemon zest if using.

Coat the crackers: Place the oyster crackers into a large mixing bowl. Pour the melted butter over the top and gently toss to coat evenly.

Add the seasoning: Sprinkle the seasoning mixture evenly over the crackers. Toss again until every cracker has a light, even coating.

Spread & bake: Transfer the seasoned crackers to the prepared baking sheet, spreading them out in a single layer.

Bake for 12–15 minutes, stirring halfway through, until crisp and lightly toasted.

Cool completely on the tray. Once cooled, sprinkle with fresh parsley if desired.
