Mediterranean Feta and Spinach Puff Pastries
Ingredients
1 sheet puff pastry (thawed if frozen)
1 cup fresh spinach (chopped)
½ cup crumbled feta cheese
¼ cup ricotta or cream cheese
1 small onion, finely chopped
1 clove garlic, minced
1 tbsp olive oil
1 tsp dried oregano
½ tsp thyme
Salt and black pepper to taste
1 egg (for egg wash)
Dried basil or parsley for topping
Instructions
Prepare the Filling:
Heat olive oil in a pan over medium heat. Add onion and garlic, cooking until softened.
Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
In a bowl, mix the cooked spinach mixture with feta, ricotta (or cream cheese), oregano, thyme, salt, and pepper. Stir until well combined.
Assemble the Pastries:
Preheat oven to 400°F (200°C).
Roll out the puff pastry and cut it into equal squares.
Spoon a small amount of filling into the center of half the squares. Cover with the remaining squares and press edges with a fork to seal.
Brush and Bake:
Brush the tops with beaten egg for a golden finish. Sprinkle dried basil or parsley over each pastry.
Bake for 18–20 minutes, or until golden and puffed.
Serve:
Let them cool slightly before serving warm.
Serving Suggestion:
Serve these pastries with tzatziki or a side of olives and tomato salad. Crispy on the outside and creamy inside, they bring the bright, herby flavors of the Mediterranean straight to your table.
