Ingredients
- 1 block (8 oz) feta cheese, cut into cubes
- 3 large tomatoes, sliced
- 1 small red onion, sliced into thin rings
- ½ cup green or Kalamata olives
- ¼ cup fresh parsley, chopped
- ¼ cup extra virgin olive oil
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ½ teaspoon salt (optional — use sparingly)
- ¼ teaspoon crushed red pepper flakes (optional for heat)
Instructions
1. Prep the Ingredients
- Slice tomatoes into rounds.
- Cut feta into evenly sized cubes.
- Slice the red onion thinly.
- Pat the olives dry if they’re packed in brine so the salad doesn’t get watery.
2. Build the Salad Tower
On a serving plate:
- Start with a slice of tomato.
- Add a ring or two of red onion.
- Add a cube of feta.
- Sprinkle a few olives around the base.
- Repeat layers to create a “tower” effect — about 3–4 layers looks beautiful.
(Tip: If you want extra stability, you can use a toothpick or small skewer down the center.)
3. Season & Drizzle
In a small bowl, mix together:
- Olive oil
- Oregano
- Black pepper
- Crushed red pepper (optional)
- Salt (only if needed)
