Oats, Apple, Yogurt & Blueberry Diet Cake

Dry Ingredients

1 ½ cups rolled oats (or oat flour)

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

Pinch of salt
Wet Ingredients

1 cup plain yogurt (Greek or regular)

2 large eggs

2 tbsp honey or maple syrup (optional)

1 tsp vanilla extract
Fruits

1 large apple, peeled and grated
-
½ cup blueberries (fresh or frozen)
Instructions
1. Prepare the batter

Grind the rolled oats into flour (if needed).

In a bowl, mix oat flour, baking powder, baking soda, cinnamon, and salt.

In another bowl, whisk yogurt, eggs, honey, and vanilla.
2. Combine

Add the wet mixture into the dry ingredients.

Fold gently until smooth.

Add grated apple and fold in.

Add blueberries and gently mix (don’t over-stir to prevent bleeding).
3. Bake

Preheat oven to 180°C (350°F).

Pour batter into a loaf tin or round cake pan lined with parchment paper.

Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
