⭐ Ingredients

Dry Ingredients

  • 1 ½ cups rolled oats (or oat flour)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • Pinch of salt

Wet Ingredients

  • 1 cup plain yogurt (Greek or regular)

  • 2 large eggs

  • 2 tbsp honey or maple syrup (optional)

  • 1 tsp vanilla extract

Fruits

  • 1 large apple, peeled and grated

  • ½ cup blueberries (fresh or frozen)


🥣 Instructions

1. Prepare the batter

  • Grind the rolled oats into flour (if needed).

  • In a bowl, mix oat flour, baking powder, baking soda, cinnamon, and salt.

  • In another bowl, whisk yogurt, eggs, honey, and vanilla.

2. Combine

  • Add the wet mixture into the dry ingredients.

  • Fold gently until smooth.

  • Add grated apple and fold in.

  • Add blueberries and gently mix (don’t over-stir to prevent bleeding).

3. Bake

  • Preheat oven to 180°C (350°F).

  • Pour batter into a loaf tin or round cake pan lined with parchment paper.

  • Bake for 35–40 minutes, or until golden and a toothpick comes out clean.
