Ingredients:
For the cake:
– 2 cups grated carrots

– 8 oz cream cheese, softened
– 1/2 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 tsp vanilla extract
Instructions:
1. Preheat oven to 350°F (180°C). Grease and flour a baking pan.
2. Mix flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. Combine grated carrots, butter, eggs, and oil. Mix well.
4. Combine wet and dry ingredients. Fold in chopped nuts if using.
5. Pour batter into the prepared pan and smooth the top.
6. Bake for 30-40 minutes or until a toothpick comes out clean.
7. For frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
8. Frost the cooled cake and sprinkle chopped nuts on top.
