Preheat & Prep: Preheat your oven to $400^{\circ}\text{F}$ ($200^{\circ}\text{C}$). Line two 12-cup muffin tins with paper liners or lightly grease the cups. (This recipe makes 18 muffins, so you’ll need a bit more than one tin).

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and 2 tsp cinnamon. Set aside.

Combine Wet Ingredients: In a separate, large bowl, whisk together the applesauce, eggs, Greek yogurt, granulated sugar, coconut sugar, melted butter, and vanilla extract until the mixture is smooth.

Combine Wet & Dry: Pour the dry ingredients into the wet ingredients and mix gently until just combined. Be careful not to overmix the batter.

Fold in Apple: Gently fold in the 1 diced apple (the one for the mix-in).

Fill Muffin Cups: Divide the batter evenly between 18 muffin cups, filling each about ¾ full.

Add Topping (Optional): In a small bowl, mix together the turbinado sugar, 1 diced apple (the one for the topping), and 1 tsp cinnamon. Sprinkle this mixture evenly over the top of the batter in each muffin cup.
