Cranberry Honey Glazed Cauliflower Steaks with Burrata
Ingredients
For the Cauliflower Steaks
- 1 large head cauliflower, cut into ¾–1 inch thick steaks
- 2 tbsp olive oil
- Salt & black pepper, to taste
- ½ tsp smoked paprika (optional)
- Cranberry Honey Glaze
- ½ cup fresh or frozen cranberries
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tsp orange zest
- Pinch of salt
To Serve
- 4 oz burrata cheese, divided
- Fresh parsley or thyme for garnish
- Optional: toasted walnuts or pecans
Directions
Prepare the Glaze
In a small saucepan, combine cranberries, honey, balsamic vinegar, orange zest, and salt.
Cook over medium heat 5–7 minutes, stirring occasionally, until cranberries soften and glaze thickens. Set aside.
Cook the Cauliflower Steaks
Preheat oven to 200°C (400°F).
Brush cauliflower steaks with olive oil, and season with salt, pepper, and smoked paprika.
Roast on a baking sheet 20–25 minutes, flipping halfway, until golden and tender.
Assemble
Place roasted cauliflower steaks on a serving platter.
Drizzle generously with cranberry honey glaze.
Top with torn pieces of burrata.
Garnish with fresh herbs and optional toasted nuts.
