Cake: 3 eggs, 150g sugar, 8g vanilla sugar, a pinch of salt, 120ml oil, 150ml milk, 230g flour, 20g cocoa powder, 15g baking powder.

Cream: 200ml heavy cream, 1 tbsp cocoa, 1 tsp instant coffee, 2 tbsp powdered sugar.

The Base: Whisk eggs, sugars, and salt. Mix in oil and milk. Sift in dry ingredients and fold until smooth.

Bake: Pour into a fluted tart pan and bake at 180°C (350°F) for 25–30 minutes.

Topping: Whip the cream with cocoa, coffee, and sugar until stiff peaks form. Spread over the cooled cake and garnish with chocolate sprinkles.
