Step-by-Step Instructions
1. Boil the Base
In a medium saucepan, combine the water, butter, 2 tablespoons of sugar, and salt. Bring the mixture to a rolling boil over medium-high heat.
2. Cook the Flour
As soon as the mixture boils, reduce heat to low and dump in all the flour at once. Stir vigorously with a wooden spoon or heat-resistant spatula. Continue stirring until the mixture forms a smooth ball of dough that pulls away from the sides of the pan (about 1–2 minutes). Remove from heat and let it cool for 5 minutes.
3. Incorporate the Egg
Add the egg and vanilla extract to the dough. Using a sturdy spoon or a hand mixer, beat the dough until the egg is fully incorporated and the batter is thick, smooth, and glossy.
4. The “Paper Pipe” Trick
To get the perfect shape shown in the images, fit a piping bag with a large open-star tip.
-
Cut small rectangles of parchment paper.
-
Pipe 3–4 inch strips of dough directly onto the parchment paper.
-
This trick allows you to drop the churros into the oil without deforming them or burning your fingers.
5. Fry to Golden Perfection
Heat 2 inches of oil in a deep skillet to 180°C (350°F).
-
Carefully lower the parchment paper with the dough into the oil.
-
After a few seconds, the paper will release and you can remove it with tongs.
-
Fry for 2–3 minutes per side until they are deep golden brown and crispy.
6. The Cinnamon-Sugar Dusting
While the churros are still hot, remove them from the oil and drain briefly on paper towels. Immediately toss them in the cinnamon-sugar mixture until fully coated.
7. Inject the Flavor
Once the churros are cool enough to handle, use a straw or a small knife to poke a hole through the center of each one from one end. Fill a piping bag with Nutella and pipe the chocolate into the hollow center until it starts to peek out the end.
