Crispy Feta Bites with Roasted Cranberry Pecan Sauce
Ingredients
Feta Bites
- 8 oz (225g) feta cheese, cut into bite-sized cubes
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp paprika
- ½ tsp black pepper
- ¼ tsp salt
- Olive oil or cooking spray for frying/baking
- Roasted Cranberry Pecan Sauce
- 1 cup fresh or frozen cranberries
- ¼ cup chopped pecans
- 2 tbsp hone
- 2 tbsp maple syrup
- 1 tbsp orange juice
- ½ tsp cinnamon
- Pinch of salt
Directions
Prepare the Feta Bites:
Set up a breading station with flour, beaten eggs, and panko mixed with paprika, salt, and pepper.
Coat each feta cube in flour, then egg, then panko, pressing lightly to adhere.
Chill for 10 minutes in the fridge to help the coating stick.
Cook the Feta Bites:
Frying: Heat a thin layer of olive oil in a skillet over medium heat. Fry feta bites for 2–3 minutes per side until golden and crispy.
Baking (lighter option): Preheat oven to 400°F (205°C). Place bites on a parchment-lined baking sheet, spray with oil, and bake for 12–15 minutes, flipping halfway.
Make the Roasted Cranberry Pecan Sauce:
Preheat oven to 375°F (190°C).
Toss cranberries and chopped pecans with honey, maple syrup, orange juice, cinnamon, and salt. Spread on a baking sheet and roast for 10–12 minutes until cranberries pop and pecans are toasted.
Mash lightly for a chunky sauce or blend for a smooth drizzle.
Serve:
Plate crispy feta bites and drizzle generously with the roasted cranberry pecan sauce. Serve warm.
