Golden Baked Feta Rolls with Sweet Cranberry Honey

 

Ingredients

For the Feta Rolls:

  • 8 oz block feta cheese
  • 6 sheets phyllo dough, thawed
  • 3 tbsp butter, melted
  • ½ tsp dried thyme or oregano (optional)
  • For the Cranberry Honey Glaze.
  • ½ cup fresh or frozen cranberries
  • 3 tbsp honey
  • 1 tsp lemon juice
  • Pinch of salt

Directions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Cut feta into small sticks or cubes.

Lay one sheet of phyllo dough on a clean surface. Brush lightly with melted butter. Layer 2–3 sheets for extra crispiness.

Place a piece of feta near one end of the phyllo and sprinkle with thyme or oregano if desired.

Roll the phyllo around the feta to form a neat roll and place on the baking sheet. Repeat with remaining feta and phyllo.

Brush the tops with remaining melted butter. Bake for 15–20 minutes until golden and crispy.

Meanwhile, prepare the cranberry honey glaze: In a small saucepan, combine cranberries, honey, lemon juice, and a pinch of salt. Cook over medium-low heat until cranberries soften and the mixture thickens slightly.

Remove baked feta rolls from oven and drizzle with warm cranberry honey before serving.
