Quick Honey & Walnut Tea Cookies
These cookies have a delightful crunch and a hint of honey sweetness, perfect for dipping into tea.
Ingredients
-
Egg: 1 medium
-
Sugar: 50g
-
Butter: 50g (melted and cooled slightly)
-
Honey: 40g (about 1 tbsp)
-
Flour: ~220g (all-purpose)
-
Baking Powder: ¾ tsp (4g)
-
Salt: A pinch
-
Filling: Finely chopped walnuts (optional, for the center)
Instructions
-
Mix Wet Ingredients: In a medium bowl, whisk together the egg, sugar, and honey until well combined. Pour in the melted butter and whisk again until smooth.
-
Combine Dry Ingredients: Sift together the flour, baking powder, and salt.
-
Form the Dough: Gradually add the dry mixture to the wet ingredients. Knead briefly until a soft, non-sticky dough forms. Note: Don’t over-knead, or the cookies will be tough.
-
Shape & Fill: Roll the dough into small balls (about the size of a walnut). If using walnuts, flatten a ball, place a small piece of walnut in the center, and roll it back into a ball or a small log.
-
Create the Ridges: To get the look in the photo, press the dough ball against a clean comb or a textured surface (like a gnocchi board or the tines of a fork) and roll it slightly to create those deep ridges.
-
Bake: Arrange the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 350°F (180°C) for about 10–12 minutes, or until the bottoms are golden brown.
-
Finish: Let them cool on the tray for a few minutes before moving to a wire rack. Dust with a little powdered sugar if desired.
