Flourless Apple & Oatmeal Healthy Cakes

Flourless Apple & Oatmeal Healthy Cakes

Ingredients

  • Oatmeal: 1 cup (90g)

  • Warm Milk: 150 ml (about ⅔ cup)

  • Apples: 2 medium, peeled and diced

  • Butter: 20g (1 ½ tablespoons), melted

  • Eggs: 2 large

  • Vanilla: ½ teaspoon vanillin or vanilla extract

  • Optional: A pinch of cinnamon for extra flavor.

Detailed Instructions

1. Prepare the Oats

  • Place the 90g of oatmeal in a large mixing bowl.

  • Pour the 150 ml of warm milk over the oats.

  • Stir and let it sit for about 10–15 minutes. This softens the oats, acting as the “flour” for your cake base.

2. Prepare the Apples

  • Peel and finely dice the 2 apples.

  • If you want a softer texture, you can lightly sauté the diced apples in the melted butter for 2–3 minutes before adding them to the batter.

3. Mix the Batter

  • In a separate bowl, whisk the 2 eggs with the vanilla and melted butter.

  • Pour the egg mixture into the softened oats and stir well.

  • Fold in the diced apples until they are evenly distributed throughout the batter.

4. Fill the Molds

  • Preheat your oven to 350°F (180°C).

  • Use a silicone muffin or mini-loaf tray (as seen in your image).

  • Spoon the mixture into the molds, filling them almost to the top since this recipe doesn’t rise as much as traditional flour cakes.

5. Bake

  • Bake for 25–30 minutes, or until the cakes are firm to the touch and the edges are slightly golden brown.

  • Allow them to cool in the mold for 10 minutes before popping them out.
