Flourless Apple & Oatmeal Healthy Cakes
Ingredients
-
Oatmeal: 1 cup (90g)
-
Warm Milk: 150 ml (about ⅔ cup)
-
Apples: 2 medium, peeled and diced
-
Butter: 20g (1 ½ tablespoons), melted
-
Eggs: 2 large
-
Vanilla: ½ teaspoon vanillin or vanilla extract
-
Optional: A pinch of cinnamon for extra flavor.
Detailed Instructions
1. Prepare the Oats
-
Place the 90g of oatmeal in a large mixing bowl.
-
Pour the 150 ml of warm milk over the oats.
-
Stir and let it sit for about 10–15 minutes. This softens the oats, acting as the “flour” for your cake base.
2. Prepare the Apples
-
Peel and finely dice the 2 apples.
-
If you want a softer texture, you can lightly sauté the diced apples in the melted butter for 2–3 minutes before adding them to the batter.
3. Mix the Batter
-
In a separate bowl, whisk the 2 eggs with the vanilla and melted butter.
-
Pour the egg mixture into the softened oats and stir well.
-
Fold in the diced apples until they are evenly distributed throughout the batter.
4. Fill the Molds
-
Preheat your oven to 350°F (180°C).
-
Use a silicone muffin or mini-loaf tray (as seen in your image).
-
Spoon the mixture into the molds, filling them almost to the top since this recipe doesn’t rise as much as traditional flour cakes.
5. Bake
-
Bake for 25–30 minutes, or until the cakes are firm to the touch and the edges are slightly golden brown.
-
Allow them to cool in the mold for 10 minutes before popping them out.
