No-Bake Chocolate Hazelnut Logs
Prep time: 5 minutes | Chilling time: 30 minutes | Servings: 8-10 logs
Ingredients
The Base:
-
250g Digestive biscuits or Maria cookies (crushed into small chunks)
-
100g Roasted hazelnuts or peanuts (chopped)
-
3 tbsp Unsweetened cocoa powder
-
1/2 cup Condensed milk (add more if the mixture is too dry)
-
50g Melted butter
The Coating:
-
200g Milk chocolate or Dark chocolate
-
2 tbsp Vegetable oil (for shine and smoothness)
-
50g Finely chopped roasted nuts (hazelnuts work best for that Ferrero taste)
Instructions
-
Mix the Base: In a large bowl, combine the crushed biscuits, chopped nuts, and cocoa powder. Pour in the melted butter and condensed milk. Stir until everything is well combined and holds together like a dough.
-
Shape: Take a portion of the mixture and roll it into a log shape (roughly 3-4 inches long). Repeat until all the mixture is used.
-
Chill: Place the logs on a tray lined with parchment paper and pop them in the freezer for about 10–15 minutes to firm up.
-
Prepare the Glaze: Melt the chocolate and oil together (either in a microwave in 30-second bursts or over a double boiler). Stir in the finely chopped nuts.
-
Coat: Using a fork, dip each chilled log into the chocolate-nut mixture until fully coated. Place back on the parchment paper.
-
Set: Let them sit in the fridge for another 15 minutes until the chocolate shell is snappy.
Pro Tips
-
Texture: Don’t crush the biscuits into a fine powder; you want those visible white chunks shown in your photo for a nice crunch.
-
Variation: Add a teaspoon of vanilla extract or a pinch of sea salt to the chocolate glaze to elevate the flavor.
