Quick Stovetop Cookies (10-Minute Recipe)

These cookies are unique because they are “baked” right in a dry frying pan, giving them a soft, cake-like interior and a beautifully browned exterior.


Ingredients

  • 1 large egg

  • 1 pinch salt

  • 100 g (½ cup) granulated sugar

  • 1 tsp vanilla sugar (or ½ tsp vanilla extract)

  • 60 g (¼ cup) sour cream

  • 30 ml (2 tbsp) vegetable oil

  • 200 g (1⅔ cups) all-purpose flour

  • 1 tsp baking powder


Instructions

  1. Mix the Base: In a medium bowl, whisk together the egg, salt, granulated sugar, and vanilla until the mixture is pale and well-combined.

  2. Add Wet Ingredients: Stir in the sour cream and vegetable oil until smooth.

  3. Incorporate Dry Ingredients: Sift in the flour and baking powder. Mix with a spatula until a soft, non-sticky dough forms. If the dough is too sticky to handle, add an extra tablespoon of flour.

  4. Shape the Cookies: Roll the dough into a log and cut it into equal pieces (about the size of a walnut). Roll each piece into a ball and flatten it slightly into a disc shape.

  5. Cook on Stovetop: Place a non-stick frying pan over low heat. Do not add oil to the pan.

  6. Brown Both Sides: Place the dough discs in the pan. Cook for about 3–4 minutes on the first side until golden brown, then flip and cook for another 2–3 minutes on the other side.

  7. Cool and Serve: Remove the cookies from the pan and let them cool slightly. They will firm up as they cool but stay soft on the inside.
