Best Healthy Oatmeal Cookies

Ingredients

100g (3.5 oz) Oatmeal (rolled or quick oats)

1/3 tsp Baking powder

30g (1 oz) Coconut flakes

2 tbsp Maple syrup

2 tbsp Coconut oil (melted)

40g (1.4 oz) Peanuts, chopped

50g (1.7 oz) Apple, finely chopped (optional for moisture and flavor)

Preheat and Prep: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, combine the oatmeal, baking powder, coconut flakes, and chopped peanuts. Stir to ensure the baking powder is evenly distributed.

Add Wet Ingredients: Pour in the maple syrup and melted coconut oil. If you are using the finely chopped apple, fold it in now.

Combine: Mix everything thoroughly. The mixture should be sticky enough to hold together when pressed. If it feels too crumbly, add an extra teaspoon of maple syrup or water.

Form Cookies: Take a tablespoon of the mixture and press it firmly into a round patty shape. Place it on the prepared baking sheet. Repeat with the remaining mixture, leaving a little space between each cookie.

Bake: Bake for 15–20 minutes, or until the edges are golden brown and the cookies feel firm to the touch.

Cool: Allow the cookies to cool completely on the baking sheet. They will crisp up significantly as they cool down.
