Ingredients
- 1 cup cottage cheese
- 2 large eggs
- 1 cup oat flour (or blend rolled oats into flour)
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp cinnamon (optional)
- Pinch of salt
- ¾ cup fresh or frozen blueberries
Instructions
- Preheat the oven
Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin. - Blend the batter
In a blender or food processor, add:- cottage cheese
- eggs
- oat flour
- honey/maple syrup
- vanilla
- baking powder
- cinnamon
- salt
Blend just until smooth and creamy.
- Fold in blueberries
Pour the batter into a bowl and gently fold in the blueberries. - Scoop into muffin tin
Fill each muffin cup about ¾ full. - Bake
Bake for 12–15 minutes, or until the tops are lightly golden and set. - Cool
Let them cool for 5 minutes before removing from the pan.
Serving Ideas
- Drizzle with warm honey or maple syrup
- Dust with powdered sugar
- Serve with Greek yogurt
- Eat warm or chilled — they’re great for meal prep!
