Blueberry Cottage Cheese Pancake Bites

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup oat flour (or blend rolled oats into flour)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp cinnamon (optional)
  • Pinch of salt
  • ¾ cup fresh or frozen blueberries

Instructions

  1. Preheat the oven
    Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin.
  2. Blend the batter
    In a blender or food processor, add:

    • cottage cheese
    • eggs
    • oat flour
    • honey/maple syrup
    • vanilla
    • baking powder
    • cinnamon
    • salt

    Blend just until smooth and creamy.

  3. Fold in blueberries
    Pour the batter into a bowl and gently fold in the blueberries.
  4. Scoop into muffin tin
    Fill each muffin cup about ¾ full.
  5. Bake
    Bake for 12–15 minutes, or until the tops are lightly golden and set.
  6. Cool
    Let them cool for 5 minutes before removing from the pan.

Serving Ideas

  • Drizzle with warm honey or maple syrup
  • Dust with powdered sugar
  • Serve with Greek yogurt
  • Eat warm or chilled — they’re great for meal prep!
