Ingredients

For the Dough:

  • 175 ml boiling water

  • 350 g flour

  • 20 ml vegetable oil

  • 1 tsp salt

For the Filling (Suggested):

  • 1 lb ground pork or chicken

  • 2 cups shredded cabbage or green onions

  • 2 tbsp soy sauce

  • 1 tbsp minced ginger

  • 1 tsp sesame oil


Instructions

  1. Prepare the Dough: In a large heat-proof bowl, combine the flour and salt. Pour the boiling water and vegetable oil into the center. Stir quickly with a wooden spoon or chopsticks until a shaggy dough forms.

  2. Knead: Once the dough is cool enough to handle, knead it on a lightly floured surface for 5–8 minutes until it is smooth and elastic. Cover with a damp cloth and let it rest for 20 minutes.

  3. Make the Filling: While the dough rests, mix your ground meat, vegetables, and seasonings in a bowl until well combined.

  4. Shape the Dumplings: Divide the rested dough into small equal portions (about the size of a walnut). Roll each into a thin circle. Place a tablespoon of filling in the center, fold, and pinch the edges tightly to seal.

  5. Cook: You can steam these dumplings for 10 minutes or pan-fry them. To pan-fry, heat a little oil in a skillet, add the dumplings, and cook until the bottoms are golden. Add a splash of water, cover, and steam until the water evaporates and the dumplings are cooked through.
