Boiling Water Dumplings with Savory Filling
Prep time: 30 mins | Cook time: 15 mins | Yield: Approx. 20-24 dumplings
Ingredients
For the Dough:
-
175 ml boiling water
-
350 g flour
-
20 ml vegetable oil
-
1 tsp salt
For the Filling (Suggested):
-
1 lb ground pork or chicken
-
2 cups shredded cabbage or green onions
-
2 tbsp soy sauce
-
1 tbsp minced ginger
-
1 tsp sesame oil
Instructions
-
Prepare the Dough: In a large heat-proof bowl, combine the flour and salt. Pour the boiling water and vegetable oil into the center. Stir quickly with a wooden spoon or chopsticks until a shaggy dough forms.
-
Knead: Once the dough is cool enough to handle, knead it on a lightly floured surface for 5–8 minutes until it is smooth and elastic. Cover with a damp cloth and let it rest for 20 minutes.
-
Make the Filling: While the dough rests, mix your ground meat, vegetables, and seasonings in a bowl until well combined.
-
Shape the Dumplings: Divide the rested dough into small equal portions (about the size of a walnut). Roll each into a thin circle. Place a tablespoon of filling in the center, fold, and pinch the edges tightly to seal.
-
Cook: You can steam these dumplings for 10 minutes or pan-fry them. To pan-fry, heat a little oil in a skillet, add the dumplings, and cook until the bottoms are golden. Add a splash of water, cover, and steam until the water evaporates and the dumplings are cooked through.
