Broccoli Apple Salad – Full Recipe
Ingredients
For the Salad:
3 cups fresh broccoli florets, chopped small
1 large red apple, diced (Honeycrisp or Fuji work great)
1 cup shredded carrots
½ cup red onion, finely chopped
½ cup dried cranberries
½ cup toasted sunflower seeds or chopped walnuts
½ cup shredded cheddar cheese (optional)
For the Creamy Dressing:
½ cup Greek yogurt or mayonnaise (or half and half blend)
2 tbsp honey or maple syrup
1 tbsp apple cider vinegar
½ tsp Dijon mustard
Pinch of salt
Pinch of black pepper
Instructions
1. Prep the Salad Ingredients
Chop broccoli into small bite-sized pieces.
Dice your apple (leave the skin on for color and crunch).
Finely chop the red onion.
Add broccoli, apples, carrots, onions, cranberries, and nuts/seeds into a large mixing bowl.
2. Make the Dressing
In a separate bowl, whisk together:
yogurt/mayo
honey
apple cider vinegar
Dijon mustard
salt & pepper
Whisk until smooth and creamy.
3. Combine Everything
Pour the dressing over the salad.
Toss well until everything is fully coated.
4. Chill & Serve
Refrigerate for at least 20–30 minutes so flavors blend.
Serve cold!
Tips
Add cooked bacon bits for extra flavor.
Use lemon juice to prevent apples from browning if prepping ahead.
This salad keeps well for 2–3 days in the fridge.
