Buckeye Peanut Butter & Chocolate Dip

Buckeye Peanut Butter & Chocolate Dip

Prep time: 10 minutes | Servings: 8–10

Ingredients

The Peanut Butter Base:

  • 1 pkg (8 oz) Cream Cheese, softened to room temperature

  • 1/2 cup Unsalted Butter, softened

  • 1 cup Creamy Peanut Butter (No-stir variety like Jif or Skippy works best)

  • 2 cups Powdered Sugar

  • 1 tsp Vanilla Extract

  • 1/4 tsp Salt (to balance the sweetness)

The Chocolate Topping/Mix-ins:

  • 1 cup Semi-Sweet Chocolate Chips (melted for the top, or mini-chips to mix in)

  • 1 tbsp Coconut Oil or Shortening (optional, helps the chocolate stay soft for dipping)

Instructions

  1. Cream the Fats: In a large mixing bowl, beat the softened cream cheese, butter, and peanut butter together with a hand mixer until the mixture is smooth and completely combined (about 2 minutes).

  2. Add Sweetener: Sift in the powdered sugar one cup at a time. Add the vanilla extract and salt. Mix on low speed until the sugar is incorporated, then increase to medium-high and beat until the dip is light and fluffy.

  3. The Chocolate Layer: * For the “Shell” (as shown in your photo): Melt the chocolate chips and coconut oil in the microwave in 30-second intervals until smooth. Pour the melted chocolate over the top of the peanut butter base and spread it to the edges.

    • For Mix-ins: Fold in 1/2 cup of mini chocolate chips directly into the batter.

  4. Chill: While you can eat it immediately, the dip is best if refrigerated for at least 30–60 minutes. This allows the flavors to meld and the chocolate top to set slightly.

  5. Serve: Serve with your favorite dippers!
