Buckeye Peanut Butter & Chocolate Dip

Ingredients
The Peanut Butter Base:

1 pkg (8 oz) Cream Cheese, softened to room temperature

1/2 cup Unsalted Butter, softened

1 cup Creamy Peanut Butter (No-stir variety like Jif or Skippy works best)

2 cups Powdered Sugar

1 tsp Vanilla Extract

1/4 tsp Salt (to balance the sweetness)
The Chocolate Topping/Mix-ins:

1 cup Semi-Sweet Chocolate Chips (melted for the top, or mini-chips to mix in)

1 tbsp Coconut Oil or Shortening (optional, helps the chocolate stay soft for dipping)
Instructions

Cream the Fats: In a large mixing bowl, beat the softened cream cheese, butter, and peanut butter together with a hand mixer until the mixture is smooth and completely combined (about 2 minutes).

Add Sweetener: Sift in the powdered sugar one cup at a time. Add the vanilla extract and salt. Mix on low speed until the sugar is incorporated, then increase to medium-high and beat until the dip is light and fluffy.

The Chocolate Layer: * For the “Shell” (as shown in your photo): Melt the chocolate chips and coconut oil in the microwave in 30-second intervals until smooth. Pour the melted chocolate over the top of the peanut butter base and spread it to the edges.

For Mix-ins: Fold in 1/2 cup of mini chocolate chips directly into the batter.

Chill: While you can eat it immediately, the dip is best if refrigerated for at least 30–60 minutes. This allows the flavors to meld and the chocolate top to set slightly.
