Ingredients
- 50 g carrot, grated
- 1 zucchini, grated
- 1/2 small onion (about 50g), finely chopped
- 1 egg
- 100 ml milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 100 g flour (about 2/3 cup)
- 50–75 g cheddar cheese, grated (adjust to taste)
- Optional: herbs like parsley or thyme for extra flavor
Instructions
1. Preheat Oven
- Preheat oven to 180°C (350°F).
- Grease a small baking dish or line it with parchment paper.
2. Prepare Vegetables
- Grate the carrot and zucchini, and squeeze out any excess moisture from the zucchini using a clean kitchen towel.
- Finely chop the onion.
3. Make the Batter
- In a large bowl, whisk together the egg, milk, salt, and black pepper.
- Gradually add flour, mixing until smooth.
- Stir in grated carrot, zucchini, chopped onion, and most of the cheddar cheese (reserve a little for topping).
4. Assemble
- Pour the batter into the prepared baking dish, spreading evenly.
- Sprinkle the remaining cheddar cheese on top.
5. Bake
- Bake for 25–30 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean.
6. Serve
- Let it cool 5 minutes before slicing.
- Serve warm as a snack, side dish, or light lunch.
Tips:
- You can add herbs like thyme, parsley, or chives to boost flavor.
- For extra crispiness on top, sprinkle a little Parmesan cheese along with the cheddar.
- This recipe works well with a mix of other grated vegetables like bell peppers or spinach.
