Carrot & Zucchini Savory Bake

Ingredients

  • 50 g carrot, grated
  • 1 zucchini, grated
  • 1/2 small onion (about 50g), finely chopped
  • 1 egg
  • 100 ml milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 100 g flour (about 2/3 cup)
  • 50–75 g cheddar cheese, grated (adjust to taste)
  • Optional: herbs like parsley or thyme for extra flavor

Instructions

1. Preheat Oven

  • Preheat oven to 180°C (350°F).
  • Grease a small baking dish or line it with parchment paper.

2. Prepare Vegetables

  • Grate the carrot and zucchini, and squeeze out any excess moisture from the zucchini using a clean kitchen towel.
  • Finely chop the onion.

3. Make the Batter

  1. In a large bowl, whisk together the egg, milk, salt, and black pepper.
  2. Gradually add flour, mixing until smooth.
  3. Stir in grated carrot, zucchini, chopped onion, and most of the cheddar cheese (reserve a little for topping).

4. Assemble

  • Pour the batter into the prepared baking dish, spreading evenly.
  • Sprinkle the remaining cheddar cheese on top.

5. Bake

  • Bake for 25–30 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean.

6. Serve

  • Let it cool 5 minutes before slicing.
  • Serve warm as a snack, side dish, or light lunch.

  • You can add herbs like thyme, parsley, or chives to boost flavor.
  • For extra crispiness on top, sprinkle a little Parmesan cheese along with the cheddar.
