Cheesy Chicken Fritters
Ingredients
For the Fritters
2 cups cooked chicken, shredded (or finely chopped raw chicken, pre-cooked if needed)
1 cup grated cheddar cheese (or mozzarella for extra stretch)
½ cup breadcrumbs (plus extra for coating)
¼ cup finely chopped onion
2 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 large egg
½ tsp paprika
½ tsp black pepper
½ tsp salt
2–3 tbsp flour (adjust for binding)
For Frying
2–3 tbsp olive oil or vegetable oil (for shallow frying)
Optional Dipping Sauce
¼ cup mayonnaise
1 tsp Dijon mustard
½ tsp garlic powder
1 tsp lemon juice
Salt & pepper to taste
Instructions
1. Prepare the Fritter Mixture
In a large bowl, combine shredded chicken, cheese, breadcrumbs, chopped onion, garlic, parsley, egg, paprika, salt, and pepper.
Mix well. If the mixture is too wet, add 1–2 tbsp flour until it holds together.
2. Shape the Fritters
Take small portions of the mixture and shape into patties or small fritters (1–2 inch thick).
Optional: coat lightly with extra breadcrumbs for an extra crispy exterior.
3. Fry the Fritters
Heat oil in a non-stick skillet over medium heat.
Fry fritters 3–4 minutes per side, or until golden brown and crispy.
Drain on paper towels to remove excess oil.
4. Prepare the Dipping Sauce (Optional)
In a small bowl, mix mayonnaise, Dijon mustard, garlic powder, lemon juice, salt, and pepper.
Serve alongside the warm fritters.

Tips for Best Results
Use day-old cooked chicken for a firmer texture.

Bake in the oven at 400°F (200°C) for 15–20 minutes for a lighter version.
Add chili flakes or smoked paprika for a spicy kick.
