Cake Batter

1 cup unsalted butter, softened

1 cup brown sugar (packed)

4 large eggs, room temperature

1¾ cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground cloves

1 tsp vanilla extract

½ cup applesauce or crushed pineapple (drained slightly)

¼ cup orange juice or apple juice
Instructions
Prepare the Fruit
In a large bowl, combine raisins, dates, cranberries, candied pineapple, citrus peel, and nuts.
Sprinkle 2 tablespoons of flour over the fruit and toss well. This keeps the fruit evenly distributed in the cake.
Make the Batter
Preheat oven to 160°C / 325°F.
Grease and line a deep 8-inch round or loaf pan with parchment paper.
In a mixing bowl, cream butter and brown sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract.
Combine Dry Ingredients
In another bowl, whisk together:

Gradually add dry ingredients to the batter, mixing gently.
Add Moisture & Fruit
Fold in applesauce (or pineapple) and juice.
Gently stir in the prepared fruit and nut mixture.
Bake Low & Slow
Pour batter into prepared pan and smooth the top.
Bake for 1 hour 30 minutes – 1 hour 45 minutes, until:

A toothpick inserted in the center comes out mostly clean
If the top browns too quickly, tent loosely with foil.
Cool & Mature (Very Important!)
Let cake cool completely in the pan.
Wrap tightly in parchment and foil.
