Coconut Cocoa Biscuit Bites
Prep time: 15 mins | Set time: 30 mins | Yield: Approx. 18–20 bites
Ingredients
-
320 g (11 oz) biscuits, finely crushed
-
100 g (1 cup) coconut flakes (plus extra for coating)
-
90 g (⅓ cup) sugar
-
30 g (¼ cup) cocoa powder
-
140 ml (½ cup + 2 tbsp) milk
-
60 g (4 tbsp) butter, melted
Instructions
-
Crush the Biscuits: Place the biscuits in a large bowl and use a hand blender or food processor to crush them until they reach a fine, sandy texture.
-
Mix Dry Ingredients: Stir the cocoa powder, sugar, and 100g of coconut flakes into the crushed biscuits until evenly distributed.
-
Add Wet Ingredients: Pour in the melted butter and the milk. Mix well with a spoon until a thick, pliable chocolate dough forms.
-
Shape: Take a small portion of the dough (about a tablespoon) and roll it between your palms to form a smooth ball.
-
Coat: Roll each chocolate ball in a shallow bowl of extra coconut flakes until the entire surface is covered.
-
Set and Serve: Place the bites on a tray and refrigerate for about 30 minutes to let them firm up before serving.
