Ingredients (Serves 4–6)
Base

4 large eggs

1 cup cottage cheese

1/2 cup milk (or any unsweetened milk)

1/2 cup shredded cheese (cheddar, mozzarella, or Swiss)

1/4 tsp black pepper

1/4 tsp garlic powder

1/4 tsp onion powder
Vegetables

1 cup fresh spinach (roughly chopped)

1 small onion, finely chopped (optional)

1 tbsp olive oil or butter (for sautéing)
Instructions
Prep

Preheat oven to 180°C / 350°F.

Grease a baking dish or pie dish.
Sauté (optional but flavorful)

Heat oil/butter in a pan.

Add onions and sauté until soft.

Add chopped spinach. Cook 1–2 minutes until wilted.

Let cool slightly.
Blend the Egg Mixture
In a bowl, whisk together: eggs
cottage cheese
milk
shredded cheese
salt, pepper, garlic powder, onion powder
(You can blend it for a smoother, custard-like texture.)
Combine
Add the spinach + onions into the mixture and stir well.
Bake
Pour into the greased dish and bake for 30–40 minutes
or until the center is set and the top is lightly golden.
Rest
Let it cool for 5–10 minutes before slicing.
It will firm up as it cools.
