Crustless Asparagus Quiche with Spinach, Mushrooms & Sausage

Ingredients:

  • 1 cup cooked sausage (crumbled)

  • 1 cup fresh spinach (chopped)

  • 1 cup mushrooms (sliced)

  • 1 cup asparagus (cut into 1-inch pieces)

  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)

  • 6 large eggs

  • 1 cup milk or half-and-half

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • Salt & pepper to taste

  • 1 tbsp olive oil (for sautéing)


Instructions:

  1. Preheat Oven
    Preheat your oven to 375°F (190°C). Grease a pie dish or baking dish.

  2. Cook the Sausage
    In a skillet, cook sausage until browned. Remove and set aside.

  3. Sauté Veggies
    In the same pan, heat olive oil. Add mushrooms, asparagus, and spinach. Cook for 3–4 minutes until softened. Season lightly with salt & pepper.

  4. Combine in Baking Dish
    Spread the sausage evenly in the bottom of the greased dish. Add the sautéed veggies on top. Sprinkle the cheese over everything.

  5. Mix Egg Filling
    In a large bowl, whisk eggs, milk, garlic powder, onion powder, oregano, salt & pepper.

  6. Pour & Bake
    Pour the egg mixture over the sausage and vegetables.
    Bake for 30–35 minutes or until the center is set and top is lightly golden.

  7. Cool & Serve
    Let sit for 5 minutes, slice, and enjoy warm!
