Ingredients:
- 1 ½ cups fresh spinach leaves, roughly chopped
- ½ cup crumbled feta cheese
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 egg, lightly beaten
- ¼ teaspoon black pepper
- ¼ teaspoon chili flakes (optional)
- ½ teaspoon dried oregano or thyme
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Cook Onion & Garlic:
- In a small pan, heat olive oil over medium heat. Sauté the diced onion and minced garlic until soft and fragrant, about 2–3 minutes. Remove from heat and let cool slightly.
- Mix Ingredients:
- In a large bowl, combine chopped spinach, crumbled feta, sautéed onion and garlic, black pepper, chili flakes (if using), and dried oregano or thyme.
- Add the beaten egg and mix well until everything is evenly coated.
- Shape Crisps:
- Using a spoon, drop small mounds of the mixture onto the prepared baking sheet. Flatten slightly with the back of the spoon.
- Bake:
- Bake in the preheated oven for 12–15 minutes, or until the edges are golden and crisp.
- Cool & Serve:
- Let the crisps cool for a few minutes on the baking sheet before transferring to a plate. Serve warm or at room temperature as a healthy snack or appetizer.
Tips & Variations:
- Add a handful of grated parmesan for extra cheesy flavor.
- Swap spinach for kale or Swiss chard for a different green.
- Serve with a light yogurt or tzatziki dip for added flavor.
