Healthy Spinach and Feta Crisps

Ingredients:

  • 1 ½ cups fresh spinach leaves, roughly chopped
  • ½ cup crumbled feta cheese
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 egg, lightly beaten
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili flakes (optional)
  • ½ teaspoon dried oregano or thyme

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook Onion & Garlic:
    • In a small pan, heat olive oil over medium heat. Sauté the diced onion and minced garlic until soft and fragrant, about 2–3 minutes. Remove from heat and let cool slightly.
  3. Mix Ingredients:
    • In a large bowl, combine chopped spinach, crumbled feta, sautéed onion and garlic, black pepper, chili flakes (if using), and dried oregano or thyme.
    • Add the beaten egg and mix well until everything is evenly coated.
  4. Shape Crisps:
    • Using a spoon, drop small mounds of the mixture onto the prepared baking sheet. Flatten slightly with the back of the spoon.
  5. Bake:
    • Bake in the preheated oven for 12–15 minutes, or until the edges are golden and crisp.
  6. Cool & Serve:
    • Let the crisps cool for a few minutes on the baking sheet before transferring to a plate. Serve warm or at room temperature as a healthy snack or appetizer.

Tips & Variations:

  • Add a handful of grated parmesan for extra cheesy flavor.
  • Swap spinach for kale or Swiss chard for a different green.
  • Serve with a light yogurt or tzatziki dip for added flavor.
