Lemon garlic cod bowls with roasted brussel sprouts
A perfectly balanced meal featuring tender cod fillets and crispy brussel sprouts, all topped with a tangy garlic lemon butter sauce. A must try!
Ingredients
For the cod:
- 1 lb cod fillets cut into 4 pieces
- 2 tablespoons of the olive oil
- 2 minced garlic cloves
- 1 tablespoon of lemon juice
- 1⁄2 teaspoon dried oregano
- 1⁄4 teaspoon of salt
- Steps
- Preheat your oven to 400°F.
Combine the olive oil, garlic, lemon juice, oregano, and salt in a small bowl.
Brush the cod fillets generously with the lemon garlic butter mixture.
Arrange the cod on a baking sheet and cook for 10-12 minutes until the fish is fully cooked and flakes easily.
While the cod is grilling, prepare the brussel sprouts by cutting them in half and tossing them in olive oil, salt and pepper.
Roast the brussel sprouts for 20-25 minutes, or until crispy.
Serve cod and brussel sprouts in bowls for a light, healthy meal.
