How to Make Mint Fudge Stuffed Brownies
Step-by-Step Instructions
Prepare the Brownie Base:
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a microwave-safe bowl, melt the butter and semi-sweet chocolate together in 30-second intervals, stirring between each interval until smooth and completely melted.
- Whisk in the granulated sugar until well combined, then beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, combine the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the chocolate mixture until just combined.
- Pour half of the brownie batter into the prepared pan and spread evenly. Reserve the remaining batter.
Make the Mint Fudge Layer: 6. In a medium saucepan over low heat, combine the sweetened condensed milk and white chocolate chips. Stir constantly until the chocolate is completely melted and the mixture is smooth.
- Remove from heat and stir in the peppermint extract. If desired, add green food coloring one drop at a time until you achieve your preferred shade of mint green.
- Pour the mint fudge mixture over the brownie layer in the pan, spreading it evenly to the edges.
Complete the Brownies: 9. Drop spoonfuls of the remaining brownie batter over the mint fudge layer and gently spread or swirl to create a marbled effect on top.
- Bake for 35-40 minutes, or until a toothpick inserted into the brownie layer comes out with a few moist crumbs.
- Allow to cool completely in the pan before cutting into squares.
