No-Bake Chocolate Peanut Butter Oatmeal Bars (Sugar-Free Option!)

Ingredients

For the oat layer:

  • 3 cups old-fashioned oats
  • 1 cup peanut butter (creamy works best)
  • ½ cup butter
  • ½ cup sugar-free sweetener
    (Swerve, Allulose, Monkfruit — or regular sugar if you prefer)
  • 1 tsp vanilla extract
  • Pinch of salt

For the chocolate topping:

  • 1½ cups sugar-free chocolate chips
    (or regular chocolate chips)
  • ½ cup peanut butter

Instructions

1. Make the oat mixture

  1. In a saucepan, melt butter + sweetener over medium heat.
  2. Stir in peanut butter, mix until smooth.
  3. Remove from heat and add vanilla + pinch of salt.
  4. Stir in oats until fully coated.

2. Press into a pan

  • Line an 8×8 or 9×9 pan with parchment.
  • Press half of the oat mixture into the bottom.

3. Make the chocolate layer

  • Melt chocolate chips + ½ cup peanut butter together
    (microwave or stovetop).
  • Pour over the pressed oat layer.

4. Add the top layer

  • Crumble and gently press the remaining oat mixture over the chocolate.

5. Chill

Refrigerate 2–3 hours or until fully set.
For faster setting: freeze 30–40 minutes.


6. Slice & enjoy

Cut into bars.
These freeze beautifully — just thaw 10 minutes before serving!
