Ingredients
For the oat layer:
- 3 cups old-fashioned oats
- 1 cup peanut butter (creamy works best)
- ½ cup butter
- ½ cup sugar-free sweetener
(Swerve, Allulose, Monkfruit — or regular sugar if you prefer) - 1 tsp vanilla extract
- Pinch of salt
For the chocolate topping:
- 1½ cups sugar-free chocolate chips
(or regular chocolate chips) - ½ cup peanut butter
Instructions
1. Make the oat mixture
- In a saucepan, melt butter + sweetener over medium heat.
- Stir in peanut butter, mix until smooth.
- Remove from heat and add vanilla + pinch of salt.
- Stir in oats until fully coated.
2. Press into a pan
- Line an 8×8 or 9×9 pan with parchment.
- Press half of the oat mixture into the bottom.
3. Make the chocolate layer
- Melt chocolate chips + ½ cup peanut butter together
(microwave or stovetop). - Pour over the pressed oat layer.
4. Add the top layer
- Crumble and gently press the remaining oat mixture over the chocolate.
5. Chill
Refrigerate 2–3 hours or until fully set.
For faster setting: freeze 30–40 minutes.
6. Slice & enjoy
Cut into bars.
These freeze beautifully — just thaw 10 minutes before serving!
