No-Sugar Healthy Oatmeal Cookies

1 cup (90g) oatmeal

50g oat flakes (for added texture)

1 apple, peeled, cored, and diced

1 banana, sliced

80g nuts (almonds, walnuts, or pecans), chopped

50g cranberries

1 tbsp stevia

1 tbsp sesame seeds

1 tsp vanillin (optional)
Instructions

Preparation: Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

Mash and Mix: In a large bowl, mash the banana until smooth. Add the diced apple, oatmeal, oat flakes, and vanillin. Stir until the fruit is well incorporated into the oats.

Add Texture: Fold in the chopped nuts, cranberries, stevia, and sesame seeds. The mixture should be thick enough to hold its shape when pressed together.

Shape: Take about 2 tablespoons of the mixture and roll it into a ball, then flatten slightly into a thick disk. Place on the baking sheet.

Bake: Bake for 15–20 minutes until the edges are golden and the cookies feel set to the touch.

Cool: Allow the cookies to cool on the pan for 5 minutes before transferring them to a plate. You can sprinkle them with a tiny amount of stevia or oat flour for a “powdered” look.
