Ingredients (Serves 2–3)
- 1 cup oatmeal (quick or rolled oats)
- 2 apples, grated or finely chopped
- 2 eggs
- 150g plain yogurt (about ⅔ cup)
- 1 tsp baking powder
- ½ tsp cinnamon (optional)
- Pinch of salt
- Optional: a handful of raisins, chopped nuts, or chia seeds
Directions
- Preheat oven to 180°C (350°F) and lightly grease or line a small baking dish.
- Mix wet ingredients: In a large bowl, combine eggs and yogurt until smooth.
- Add dry ingredients: Stir in oatmeal, baking powder, cinnamon, and salt. Mix until combined.
- Fold in apples: Add grated apples and any optional extras (raisins, nuts, chia seeds).
- Bake: Pour mixture into prepared baking dish and smooth the top. Bake for 25–30 minutes, or until set and lightly golden on top.
- Serve: Let cool slightly, then cut into squares. Serve warm, optionally with a drizzle of yogurt or nut butter.
Tips:
- For extra sweetness without sugar, you can sprinkle a little cinnamon or vanilla extract on top.
- Store leftovers in the fridge for 3–4 days; reheat or eat cold.
- Can be made in muffin tins for grab-and-go portions.
