Oatmeal & Apple Breakfast Bake

Healthy, fiber-rich, and protein-packed — perfect for weight loss and keeping you full all morning.


 Ingredients (Serves 2–3)

  • 1 cup oatmeal (quick or rolled oats)
  • 2 apples, grated or finely chopped
  • 2 eggs
  • 150g plain yogurt (about ⅔ cup)
  • 1 tsp baking powder
  • ½ tsp cinnamon (optional)
  • Pinch of salt
  • Optional: a handful of raisins, chopped nuts, or chia seeds

‍ Directions

  1. Preheat oven to 180°C (350°F) and lightly grease or line a small baking dish.
  2. Mix wet ingredients: In a large bowl, combine eggs and yogurt until smooth.
  3. Add dry ingredients: Stir in oatmeal, baking powder, cinnamon, and salt. Mix until combined.
  4. Fold in apples: Add grated apples and any optional extras (raisins, nuts, chia seeds).
  5. Bake: Pour mixture into prepared baking dish and smooth the top. Bake for 25–30 minutes, or until set and lightly golden on top.
  6. Serve: Let cool slightly, then cut into squares. Serve warm, optionally with a drizzle of yogurt or nut butter.

 Tips:

  • For extra sweetness without sugar, you can sprinkle a little cinnamon or vanilla extract on top.
  • Store leftovers in the fridge for 3–4 days; reheat or eat cold.
  • Can be made in muffin tins for grab-and-go portions.
