Oats and Carrot Muffins
Ingredients:
– 1 1/2 cups all-purpose flour
– 1 cup rolled oats
– 1 cup grated carrots
– 1/2 cup brown sugar
– 1/2 cup milk
– 1/4 cup vegetable oil
– 2 large eggs
– 1 tsp baking powder
– 1/2 tsp cinnamon
– 1/4 tsp nutmeg
– Pinch of salt
– Optional: chopped nuts or raisins
Instructions:
1. Preheat oven to 375°F (190°C). Line a muffin tin.
2. Mix flour, oats, carrots, sugar, baking powder, cinnamon, nutmeg, and salt.
3. Add milk, oil, and eggs; mix until just combined.
4. Fold in nuts or raisins if using.
5. Divide batter into muffin cups.
6. Bake for 20-25 minutes or until golden brown.
