Mini Fruit Cake Muffins
Soft, moist, and packed with fruity goodness — perfect for holidays, tea time, or lunchboxes
Ingredients
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- ½ cup brown sugar
- 2 eggs
- ½ cup vegetable oil or melted butter
- ½ cup milk or orange juice
- 1 tsp vanilla extract
- 1½ cups mixed dried fruits
(raisins, chopped dates, cranberries, candied orange peel) - ½ cup chopped nuts (walnuts or almonds – optional)

Instructions
- Preheat oven to 350°F (180°C). Line a mini muffin pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
- In another bowl, beat eggs with brown sugar until smooth.
- Add oil, milk (or juice), and vanilla. Mix well.
- Gradually fold dry ingredients into wet ingredients.
- Stir in dried fruits and nuts.
- Fill mini muffin cups ¾ full.
- Bake for 12–15 minutes, until a toothpick comes out clean.
- Cool slightly and enjoy.
