Prepare Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Add the fresh spinach and cook until wilted. Remove from heat and drain all excess liquid completely. Chop the cooked spinach finely.

Make Filling: In a large bowl, combine the drained, chopped spinach, ricotta cheese, feta cheese, shredded mozzarella, grated Parmesan, the 1 large egg, salt, and black pepper. Mix well until everything is evenly combined.

Prepare Pastry: Unroll the puff pastry sheet onto a lightly floured surface or a piece of parchment paper. If the sheet is rectangular, ensure the long side faces you.

Spread Filling: Spread the spinach and cheese filling evenly over the entire surface of the puff pastry, leaving a small, clean border along the edges (as seen in the top image panel).

Roll and Chill: Starting from one long edge, roll the pastry up tightly into a log. Wrap the log tightly in plastic wrap and chill in the refrigerator for at least 30 minutes (this makes slicing easier).

Prep & Slice: Preheat your oven to $400^{\circ}\text{F}$ ($200^{\circ}\text{C}$). Line a baking sheet with parchment paper. Unwrap the log and slice it into $1$-inch thick rounds (about 6–8 rolls).

Bake: Place the cut rolls, swirl-side up, on the prepared baking sheet. Brush the tops and sides of the rolls with the egg wash and sprinkle with sesame seeds (if using).

Cook: Bake for 20–25 minutes, or until the pastry is puffed and golden brown (as seen in the bottom image panel).
