Ingredients

For the Crust

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

For the Filling

  • 2 cups fresh spinach (or 1 cup frozen, thawed & well-drained)

  • 4 large eggs

  • 1 cup heavy cream or half-and-half

  • ½ cup whole milk

  • 1 cup feta cheese, crumbled

  • ½ cup shredded mozzarella or Swiss (optional but recommended)

  • 1 small onion, finely chopped

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ¼ teaspoon nutmeg (optional)

  • ½ teaspoon dried oregano or thyme

Instructions

  1. Prepare the crust
    Preheat oven to 375°F (190°C).
Place pie crust into a 9-inch pie dish and crimp edges.
Pre-bake for 8–10 minutes if you want a crisp bottom (optional but recommended).

  2. Cook the spinach
Heat olive oil in a pan over medium heat.
Sauté onion until soft (about 3 minutes).
Add spinach and cook just until wilted.
Remove from heat and let cool slightly.

  3. Make the custard
In a bowl, whisk eggs, cream, milk, salt, pepper, nutmeg, and herbs until smooth.

  4. Assemble the quiche
Spread spinach-onion mixture evenly over the crust.
Sprinkle feta and shredded cheese on top.
Pour egg mixture gently over the filling.

  5. Bake
Bake for 40–45 minutes, until the center is just set and the top is lightly golden.
Let rest 10 minutes before slicing.
