A dense, nutrient-packed dessert featuring a hearty oatmeal crust and a spiced apple topping.

Ingredients

For the Crust:

  • Oatmeal: 200 grams (approx. 2 cups)

  • Baking Powder: 7 grams

  • Salt: 1 pinch

  • Apples: 2 medium apples (to be grated/pureed)

  • Lemon Juice: 10 ml

  • Egg: 1 large

  • Olive Oil: Small amount for greasing the pan

For the Filling:

  • Apples: 900 grams (about 5-6 medium apples), sliced or cubed

  • Lemon Juice: 15 ml

  • Flavorings: 7 grams cinnamon

  • Sweetener: Honey or your preferred sugar-free sweetener, to taste

  • Dried Fruit: 60 grams dried cranberries or raisins (soaked in water for 15-20 mins)

  • Nuts: 70 grams walnuts, chopped


Instructions

  1. Prepare the Fruit: Soak the raisins or cranberries in cold water for 15-20 minutes to plump them up, then drain. Toss the 900 g of sliced apples with 15 ml of lemon juice, cinnamon, and your chosen sweetener.

  2. Make the Crust Dough: * Grind the oatmeal into a coarse flour if you prefer a smoother texture, or leave as is for more “bite.”

    • Grate or puree the 2 apples for the crust and mix with 10 ml lemon juice to prevent browning.

    • In a large bowl, combine the oatmeal, salt, baking powder, the apple puree, and the egg. Mix until a thick dough forms.

  3. Assemble: * Grease your baking pan with a little olive oil.

    • Press the oatmeal dough into the bottom and slightly up the sides of the pan to create a base.

    • Spread the prepared apple filling mixture over the crust.

    • Top with the soaked dried fruit and chopped walnuts.

  4. Bake: Bake at 180°C (350°F) for approximately 40-45 minutes, or until the crust is firm and the apples are tender.

  5. Cool: Allow the cake to cool significantly before slicing; because it lacks butter and gluten, it needs time to set so it doesn’t crumble when cut.
