Ingredients

The Fruit Base (The “Glue”):

  • 100 g Dates (pitted)

  • 70 g Plums (prunes)

  • 80 g Dried apricots

The Texture & Crunch:

  • 70 g Walnuts, chopped

  • 75 g Almonds, roasted

  • 50 g Pumpkin seeds

  • 50 g Raisins

  • 45 g Dried cranberries

  • 20 g Pine nuts

  • 20 g Oat flakes

The Coating:

  • 35 g Sesame seeds (lightly toasted)


Instructions

  1. Prepare the Fruit Paste: Place the dates, plums (prunes), and dried apricots into a food processor. Pulse until they form a thick, sticky paste. If the fruits are too dry, soak them in warm water for 10 minutes and pat dry before blending.

  2. Mix the Dry Ingredients: In a large mixing bowl, combine the chopped walnuts, roasted almonds, pumpkin seeds, raisins, cranberries, pine nuts, and oat flakes.

  3. Combine: Add the fruit paste to the bowl of nuts and seeds. Using your hands (or a heavy spatula), mix thoroughly until all the nuts are evenly coated and the mixture sticks together.

  4. Shape the Log: Lay out a piece of parchment paper or plastic wrap. Transfer the mixture onto it and press it firmly into a tight log shape (cylindrical).

  5. Coat with Sesame: Spread the sesame seeds on a flat surface or the parchment paper. Roll the log over the seeds, pressing down slightly so they adhere to the outside, covering it completely.

  6. Chill and Set: Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours (or overnight). This allows the oats to soften and the log to firm up so it can be sliced cleanly.

  7. Serve: Using a sharp knife, slice into rounds as shown in your photo.

  • Toasting: For extra flavor, lightly toast the pumpkin seeds and pine nuts in a dry pan for 2–3 minutes before mixing.

  • Storage: Keep these in an airtight container in the fridge for up to 2 weeks, or freeze them for up to 3 months.
