6 hard-boiled eggs, peeled and halved lengthwise

2 tablespoons mayonnaise

1 teaspoon yellow mustard

1 tablespoon dill pickle relish

4–5 drops liquid stevia

1/8 teaspoon sea salt

5–6 grinds fresh black pepper

3–4 tablespoons finely chopped cooked bacon, divided (about 3 slices)

1–2 teaspoons minced chives (for garnish)

Paprika, optional (for garnish)
👩🍳 Instructions

Remove yolks from the egg halves and place them in a medium bowl. Mash well with a fork or potato masher.

Add mayonnaise, mustard, pickle relish, stevia, sea salt, and black pepper. Mix until smooth and creamy.

Stir in about two-thirds of the chopped bacon, reserving the rest for topping.

Transfer the yolk mixture to a piping bag or a zip-top bag with the corner snipped. Pipe evenly into the egg white halves.

Garnish with remaining bacon, minced chives, and a light sprinkle of paprika if desired.

Refrigerate for at least 1 hour before serving to allow flavors to develop.
