Feta Tomato Chicken Skillet (One-Pan, 30 Minutes!)
A gorgeous, super tasty one-pan chicken dish with fresh tomatoes, garlic, thyme, and creamy feta — ready in under 30 minutes!
Serve over quinoa or brown rice with steamed broccoli for a healthy, satisfying meal.
Ingredients (Serves 4)
Chicken

2 large boneless, skinless chicken breasts

2 tsp dried thyme
-
Sea salt & black pepper, to taste

1 tbsp olive oil or avocado oil
Sauce
-
1 white onion, finely diced
-
4 garlic cloves, pressed
-
2 cups fresh cherry tomatoes
-
½ cup dry white wine or low-sodium chicken bone broth
Finish
-
½ cup crumbled feta cheese
-
Fresh parsley, minced (for garnish)
Instructions
1. Prep the Chicken

Preheat your oven to 375°F (190°C).

Slice the 2 chicken breasts in half lengthwise to create 4 thin cutlets.

Pat dry with paper towels.

Season all sides with thyme, sea salt, and black pepper.
2. Sear the Chicken

Heat oil in a large oven-safe skillet over medium-high heat.

Sear chicken for 2–3 minutes per side until golden brown.

Remove and set aside on a plate.
3. Make the Tomato-Garlic Sauce

In the same skillet, add diced onion; sauté 3–4 minutes until softened.

Add garlic and cherry tomatoes; cook 2–3 minutes until tomatoes begin to burst.

Pour in the wine or broth and let it bubble for 1–2 minutes to deglaze the pan.
4. Combine & Bake

Return the chicken to the skillet and nestle the pieces into the sauce.

Sprinkle crumbled feta on top.

Transfer the skillet to the oven and bake 10–15 minutes,
or until chicken reaches 165°F (74°C).
5. Garnish & Serve
Remove from oven, sprinkle with fresh parsley, and serve hot.
